250 gms all purpose flour
300 gms sugar
113 gms margarine
240 ml buttermilk
1 tsp baking soda
1 tspn vinegar
20 gmsLemon rind
2 tspns vanilla


  1. Line your baking tin preferably two separate 8″ pans
  2. Pre heat oven at 180°c
  3. Put sugar and margarine in a mixer and beat untily well mixed
  4. Beat the two eggs separately and add to the sugar and margarine
  5. Mix well using a wire whisk
  6. Add the butter milk and sieved flour starting with the flour and ending with the flour for better results
  7. Put the batter in the two tins and bake for 35-40mins at temp 180°
  8. Let the cake to cool
  9. Iced with a royal Icing
  10. Serve it.
